What is Wheat
Wheat is a grass of the genus Triticum, which contains something like 30 different types genetically, among which only three are commercially produced, the Aestivum Vulgaris, the Durum Turgidum and Compactum. The Durum is used in the production of noodles and other pasta, compactum and a low-wheat gluten produced in small proportion, used to make cookies soft, while the Aestivum is responsible for more than four fifths of world production, by be suitable for baking.
The chemical constituents are not distributed evenly across the grain.
The pericarp (about 5% by weight of the grain) is rich in pentosans, cellulose, ash and protein.
The aleurone (7%) is a layer rich in ash (phosphorus, phytate), protein, fat, vitamins (niacin, thiamin, riboflavin) and enzymes.
The endosperm (82%) is mainly composed of starch, but its outer part (subaleurona) contains more protein than the inner portion.
The germ (3%) have higher contents of protein, lipids, reducing sugars and ash.
